拔 絲 蘋 果
材 料 : 2 個蘋果
1 份糖膠料
1 份脆漿料
炒香黑芝麻適量
糖膠料 : 5 湯匙水
5 湯匙糖
1 湯匙麥芽糖
麻油少許
脆漿料 : 3/4 杯水
2 湯匙油
1 杯自發粉
做 法 : (1) 先用 3/4 杯清水開勻自發粉,調成漿狀待五
至十分鐘,加入油拌勻成脆漿待用。
(2) 蘋果去皮及芯,放入稀鹽水內略浸撈出,吸乾
水份,一分為六件留用。
(3) 將每件蘋果沾滿脆漿,放入大滾油內,炸至表
面微金黃酥脆,即撈起吸乾油份備用。
(4) 置糖,水,麻油於小型煲內,以文火煮至起膠,
加入麥芽糖,煮至起絲,隨即將脆蘋果放入,
快手兜勻,使每件蘋果沾上糖膠,並灑上黑芝
麻再兜勻,即可挾起熱食。
Toffe Apple
Ingredients : 2 Apples
1 portion of syrup
1 portion of batter
Some fried black seasame
Syrup : 5 tbsp water
5 tbsp sugar
1 tbsp maltose
A dash of seasame oil
Batter : 3/4 cup of water
2 tbsp oil
1 cup of self-raising flour
Method : (1) Mix self-raising flour with 3/4 cup water as batter.
Wait for 5-10 minutes. Stir in some oil.
(2) Peel & decore apple. Soak in light brine briefly. Soak
up excessive moisture. Divide an apple into 6 pieces.
(3) Coat each piece of apple with batter. Deep-fry in
boiling oil till slightly golden brown and crisp. Soak up
excessive oil.
(4) Put sugar, water and seasame oil in a small pot. Cook
over mild heat till sticky. Add in maltose. Cook till
shreds appear. Put in apple. Stir quickly. Sprinkle on
some fried black seasame. Dish up and serve hot.
